The Art of Gelato Making
The concept of eating frozen desserts started when the Asians or perhaps the Ancient Roman soldiers themselves…this is debatable…..realized that crushed ice could be eaten with flavorings after the volcanoes Etna and Vesuvius in Italy. Then came the Italian Renaissance during the 14th century, when gelato was officially developed by famous artist and architect Bernardo Buontalenti, with milk instead of frozen water.
In Italian, gelato translates to “Ice cream” although it differs significantly from the standard ice cream. Gelato and the standard ice cream both start out as a similar custard base but, gelato contains a higher proportion of milk; a lower proportion of egg yolk (or none at all); less butterfat (as it contains less cream); less air (as it is churned at a slower speed); has more intense flavor (as it is served 10-15 degrees warmer than ice cream); and is made from natural ingredients. Gelato also contains a higher number of vitamins as they are often made using real fruit or fruit juice (and fruit have a high amount of vitamins in them). Gelato can be made in two forms: as “Sorbetto” (made with adding water and creating an even lighter texture), and as “Crema” (more cream and usually flavored with chocolate and cream based flavors).
