Torcè was born out of passion (as unshakable love), which led to living a challenge driven by tenacity, that overcomes three years of trials; research and attempts; study and time that was never enough and uncertainty if it will yield anything. A story that makes the simplest things passionate, such as lightening eggs, adding marsala to sugar, of how slow fire caresses the
mixture to boiling. A story in which milk, cream and a few other carefully weighed ingredients have created something unique. For them, using fresh ingredients is not enough, they associate the freshness of raw materials with particular attention in their production phases, to give us a fresh, genuine and unique homemade ice cream. A completely delicious and healthy ice cream, one of the best gelato in Rome.

In their fruit ice cream you do not find milk, dyes or industrial preparations. The Art of Gelato Making
The concept of eating frozen desserts started when the Asians or perhaps the Ancient Roman soldiers themselves…this is debatable…..realized that crushed ice could be eaten with flavorings after the volcanoes Etna and Vesuvius in Italy. Then came the Italian Renaissance during the 14th century, when gelato was officially developed by famous artist and architect Bernardo Buontalenti, with milk instead of frozen water.
In Italian, gelato translates to “Ice cream” although it differs significantly from the standard ice cream. Gelato and the standard ice cream both start out as a similar custard base but, gelato contains a higher proportion of milk; a lower proportion of egg yolk (or none at all); less butterfat (as it contains less cream); less air (as it is churned at a slower speed); has more intense flavor (as it is served 10-15 degrees warmer than ice cream); and is made from natural ingredients. Gelato also contains a higher number of vitamins as they are often made using real fruit or fruit juice (and fruit have a high amount of vitamins in them). Gelato can be made in two forms: as “Sorbetto” (made with adding water and creating an even lighter texture), and as “Crema” (more cream and usually flavored with chocolate and cream based flavors).
Varieties in gelato is what ice cream lovers crave for, we all want endless possibilities, and the Italians provides just this, “endless possibilities”! It can be eaten as an appetizer, a main course, used as a dessert or can be eaten alongside a snack. It can be made with a machine or can be made manually (depending on the desired texture and the type).
In Italy, there is a Carpigiani Gelato University, near Bologna where you can learn how to make ice cream in just 4 weeks (3 weeks of training with a 1 week internship at a gelato shop in Italy) and become a “Master Gelatiere”. There you learn about temperature variations humidity and lots more (perfect gelato making requirements). Alternatively, you can visit the Carpigiani Gelato Museum (located in Anzola, Italy) where they bring to life the “history” and “art of making gelato” by displaying odes to gelato, basic ingredients for gelato, and the transition of gelato making machineries. You can even visit both places, knowledge is never a waste. Although, you do not have to travel all the way to Bologna or Anzola to learn the art of gelato making especially if you are doing it just for fun. If you are in Rome, you can visit and participate in any of below workshops where you meet gelato ‘artisan’ Salvatore who will teach you all the ins and outs of how to make your favorite desert the Italian way.
